RECIPE: Hearty coconut granola

whole rolled oats

raw walnuts (or raw cashew nuts)

raw almonds

pumpkin seeds

coconut shavings

chia seeds

hemp seeds

dried apple (optional)

bee pollen

coconut oil

raw honey

Preheat the oven to 150°C. Combine all dry ingredients in a mixing bowl. Gently melt the coconut oil and honey together and then use clean hands to mix into the dry ingredients and toss to coat; it will be sticky and messy but that's the fun part. Spread the mixture in a thin layer on a baking sheet lined with baking paper and bake for 10 minutes, until very lightly toasted. Cool before serving or storing. This granola can be kept in an airtight container in a cool, dry place. NB: Homemade granola will taste like burnt popcorn if you overcook it; keep it at a low temperature just for a 8-10 minutes to let it come together.
