RECIPE: Gluten-free banana bread

4 VERY ripe bananas (additional one to decorate)

1/3 cup coconut oil

dash of vanilla extract

drizzle of honey

1 cup buckwheat flour

3/4 cup coconut flakes

sprinkle of cinnamon

1/2 tsp baking soda

2 tsp baking powder

sprinkle of chia seeds

Heat oven to 350F. Mash the bananas in a bowl with coconut oil, vanilla and honey. In a separate bowl combine the dry ingredients. Fold the dry ingredients into the wet until well combined. Pour mixture unto a lined loaf tin and decorate with remaining banana and/or walnuts. Bake in oven for 55 to 60 minutes until golden brown and a skewer comes out clean. Enjoy warm with delicious cup of tea.
